Fennel – vegetable, herb and spice

Fennel is a biennial plant which belongs to the family of Apinaceae. It is indigenous to the Mediterranean region and can be found growing wild near the sea coast and also cultivated in gardens. It likes warm but not too hot climate.
During the first year only fennel leaves will grow and during the second year stalks, leaves and flowers will grow up to 2 metres in height. Fennel has feathery leaves and pretty umbels of tiny yellow flowers. The bulb is ribbed and flattened with pungent aroma and sweet flavour.
All parts of the fennel are edible: roots, stalks, leaves and seeds. It has a delicate, refreshing taste and it blends well with fish and seafood. The roots are eaten raw as a salad and boiled or braised on their own or with other vegetables. Fennel seeds are very aromatic and are used both as a spice and in herbal medicine. Fennel seed tea is known to help with indigestion problems (flatulence, spasms, gas). A tea spoon of cold, mild tea can be given to a baby to relieve colic. Pregnant women should avoid fennel seeds because they provoke menstruation.
As a medicinal herb fennel helps with cold, flu, cough, kidney problems and is often used as appetite suppressant.
Fennel bulb (root) is an excellent source of vitamin C; dietary fibres which help regulate digestion and may prevent colon cancer; and potassium, a mineral that helps lower high blood pressure. Fennel seed oil which is produced by distillation of fennel seeds is a good remedy for hoarseness and sore throat, and it is also used for anti-rheumatic massage. It contains some beta carotene. Anise, caraway, celery are similar looking herbs.
